Time To Bake

This week we got a record snowfall. In fact we were literally dumped on. The whole place looked like a picture out of Narnia. Pretty though it was, it was a beast to drive in. All I wanted was to be curled up in front of a warm fire with some tea and a treat. I decided to make some muffins. Below is the recipe I came up with. Raisin and Apple Muffins (I need to come up with a more creative name)

2 1/2 cups all-purpose flour

1/4 tsp salt

2 tbsp baking powder

1/2 cup wheat bran

1/2 cup boiling water

2/3 cup cane sugar

2 tbsp ground flax seed

1/2 cup each raisins (soaked in warm water) and shredded apple

1/4 cup oil

1 cup almond milk (or other milk or milk alternative)

Pre-heat oven to 350. Mix flax seeds with boiling water and set aside. 

Sift together flour, salt, and baking powder. Add wheat bran and sugar and mix well. 

In a separate bowl, mix together the milk, oil, flax seed and water mixture, raisins, and apple. Add to flour mixture and stir until just combined. Make sure you get all the flour left on the bottom of the bowl. 

Scoop into lightly greased or paper lined muffin tins.Bake for 20-25 minutes or until a toothpick inserted comes out clean.

I'd post pictures as well, but once the gang got a hold of them, they didn't last. Better luck next time.
