I’m sitting at my dinning table staring at the accumulation of snow. Winter is still here and I’m anxiously waiting for spring. This winter was intense. I can’t believe how much it snowed. Last month I decided to explore through our backyard. It proved to be a vigorous hike as the snow came up to my hips. I’m not a short person so you can imagine how much snow that was.
I am disappointed that I didn’t get the maple trees marked before the snow flew. I wish I could identify them just by their bark, but I’m not that good. I would love to tap the trees and make maple syrup. I did that once and enjoyed it very much. First I’ll invest in a good pair of snowshoes.

One-quarter cup of maple syrup contains more than 100% of the RDA of manganese, 54 mg of calcium, and 80 mg of Omega-6 fatty acids, to name a few. That being said, maple syrup is definitely a healthy addition to the diet. As with everything remember to exercise moderation.
